Meatballs

  • about a pound of ground hamburger
  • 1/2 grated onion (It really should be grated, instead of chopped. Makes the flavor spread more.)
  • a couple handfuls of bread crumbs
  • four shakes of Italian seasoning
  • about 1/4 a cup of Parmesan cheese

Mix it all up and form meatballs about the size of a golf ball. Set the oven to 375 and cook for 10 minutes. roll all of the meatballs and reset the timer to 15 minutes. Drain fat and cook for 10 more minutes. Take them out, cool them, and eat them. Or freeze them. Or eat them.

Stuffed Peppers

  • 4 Green Bell Peppers
  • hamburger (as much as you need, I used about a pound)
  • wild rice (I used a cup)
  • 8 oz petite diced tomato
  • 1/2 cup onion, diced very small. (If you need more, just go for it. My sister is way picky, so I ended up using a grater for about half of them)

Mix hamburger, tomato and onions in a pan, and brown the meat and such together.

Cook the rice (there are generally directions on the package). Mine takes about half an hour to do so, a tablespoon of olive oil, 2 cups of water and some salt and pepper.

Combine rice and hamburger mix together in the pan, and let it cool for a bit.

While it’s cooling, slice open the tops of the peppers (I took a steak knife and cut a very thin hole around the lid. Because I like peppers) and rinse out the seeds and white flesh from the inside.

Finally, stuff the peppers! I put mine into two loaf pans - the sort meatloaf is cooked in - but, you can put them into a crock pot, or a roasting pan. Tonight, my mother and I are eating separate from my dad and sister, so two peppers in one and two in the other seemed like a clever, and better, idea.

Actually the finally part is here, where you cook them. Set the oven to 350 and cook for about 15 minutes, or until the top is brown. You can add cheese of some sort to the top if you’d like, but I don’t like cheese, so… there’s that.

(You can also mix all of the ingredients up and not cook them, and you’ll have to cook the stuffed peppers longer.)

We also mixed up some tomato paste, some of the juices from the diced tomato and a tablespoon of brown sugar to put on top.
